Two varieties of chamomile are generally used by gardeners and tea lovers. These are Roman Chamomile Chamaemilum nobile, which is a a short perennial, and German Chamomile Matricaria recutita a taller (but not particularly tall) annual variety that will reseed readily. Both bear cute, white flowers with cheery yellow centers that yield up a relaxing tea. Dyer’s chamomile also exists and this yields a bright yellow dye. Chamomile can be used to soothe tempers, to encourage prosperity, and to bring luck.
